Features
After the audacious endeavour to retrieve the ancient Italian Senatore Cappelli wheat, traditionally used in the production of pasta, Le Stagioni d'Italia decided to expand the product range which has this raw material as the main ingredient. This resulted in products such as Piadina and Pinsa, with unique features, provided by the semolina. Piadina is kneaded with olive oil, without lard. Pinsa is hand rolled, and follows a slow natural rising process and is baked on stone.
The semolina from the Senatore Cappelli wheat is ground in our mill, following our supply chain.
